Cashew Peanut Butter Granola

This cashew peanut butter granola is crunchy, delicious & the perfect sweetness.

This is by far the best granola recipe I’ve created.

I love eating this granola with vanilla almond milk & fresh fruit. I also eat it on it’s on as a snack. It’s also delicious with coconut yogurt.


1/2 cup maple syrup or honey (I used raw honey)

1/2 cup creamy crunchy peanut butter

4 cups oats

1/2 cup cashews

1 tsp cinnamon

1 1/2 teaspoon pure vanilla extract

1 Tablespoon coconut oil


Combine oats, cashews & cinnamon in a bowl. Set aside.

Put coconut oil in a pot on medium low heat add peanut butter & maple syrup/honey . Stir until smooth & runny consistency. Don’t let it bubble.

Take off heat & stir in vanilla.

Pour wet ingredients in dry and mix until all oats are fully coated. It’s best to use your hands.

Grease baking sheet & pour granola on top as flat as possible. Optional: drizzle a little honey or maple syrup on top. Bake on 325 for 15-20 minutes. Check on 15 minutes. If that’s your desired browness take it out. I baked mine for 20 minutes.

Allow to cool & harden.

Break into clusters & enjoy.

Tip: Bake on top rack in the oven.
